Caribbean Red Beans and Rice: A Cozy Plant-Based Meal Full of Flavor

What You’ll Need
1 (15-ounce) can red kidney beans, rinsed and drained
1½ cups cooked brown rice
½ cup low-sodium vegetable broth
1 cup coconut milk or 1 cup unsweetened plant milk mixed with 1 teaspoon coconut extract
1 teaspoon dried thyme leaves
½ teaspoon allspice
½ Scotch bonnet pepper, or cayenne pepper to taste
1 green onion, sliced, for garnish
How to Make It
Add the kidney beans, cooked brown rice, vegetable broth, coconut milk, thyme, allspice, and Scotch bonnet pepper to a medium saucepan.
Cook over medium-low heat for approximately 15 minutes, stirring occasionally, until the mixture is heated through and has thickened slightly.
Divide between two bowls and garnish with sliced green onion.
That’s it. One saucepan, a handful of ingredients, and dinner is ready.
A Few Tips From our Kitchen
Start gently with the heat. Scotch bonnet peppers are powerful. If you are sensitive to spicy foods, start with considerably less and add more only if needed. Cayenne is an easy alternative when Scotch bonnet peppers aren't available.
Use leftover rice. This recipe is perfect for cooked brown rice sitting in the refrigerator from yesterday's dinner.
Adjust the consistency. Prefer it creamier? Let it simmer a little longer. Want a looser beans-and-rice bowl? Add another splash of vegetable broth or plant milk.
Add more vegetables. Bell peppers, spinach, chopped tomatoes, corn, or sautéed greens can easily turn this simple recipe into an even more substantial bowl.
Finish it with freshness. Along with green onion, try fresh cilantro, parsley, or a squeeze of lime just before serving.
